As researchers continue to study which environmental factors may contribute to the cause or trigger of celiac disease, a review in Frontiers in Pediatrics (Microbial Transglutaminase Is Immunogenic and Potentially Pathogenic in Pediatric Celiac Disease) reports that microbial transglutaminase, a common food additive, could possibly be both a cause and trigger, though more research is needed.
