Beth Hillson has been on a celiac journey since 1976. She lived gluten-free when the only GF options tasted as she described “like styrofoam” and information on celiac disease (CD) was sorely lacking. Dissatisfied with the gluten-free products that were available, she became an accomplished baker, eventually sharing her GF baking products with the gluten-free community, via “Gluten Free Pantry’ which she founded in 1993, being one of the first GF food companies to enter the market. Ms. Hillson also authored the popular cookbook “Gluten-Free Makeovers” and is founder of the blog by the same name. She also contributes as the food editor of Gluten-Free & More Magazine (formerly Living Without), and if that weren’t enough to keep someone busy from dawn until dusk, Ms. Hillson’s advocacy for the celiac and non-celiac gluten sensitive (NCGS) community led to her role as President of the American Celiac Disease Alliance, and she continues to lectures on gluten-free baking and living a gluten-free lifestyle at celiac/gluten-free events around the nation. Both her son and sister also have CD.

Lifestyle chapters include foods that are safe to eat, foods to avoid and where that sneaky gluten lurks. Gluten in alcohol, medication and cosmetics is also addressed and she provides helpful tips for preparing the kitchen, how to shop for healthy, gluten-free food, be safe when traveling and dining, and how to socialize without anxiety. Parents will appreciate the information Ms. Hillson offers on raising a child/teen with celiac/NCGS (she even includes tips on how to explain the GF diet to babysitters and grandparents!). I particularly found the info she included in her “Raising Your GF IQ” paragraphs, which are sprinkled throughout various chapters, to be very informative.
And yes … the book includes a few of Ms. Hillson’s wonderful gluten-free recipes (Apple Pie with Flaky Piecrust, French Bread Baguettes, Soft Pretzels to name a few!). Gluten-free flours, gums, safe substitutions, stocking the pantry (& more) is addressed.
